Ingredients:

  • 1 lb (about 4-5) carrots, peeled and cut into sticks or left whole if small

  • 2 tbsp olive oil

  • 2 tbsp honey

  • 2 cloves garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried thyme (or fresh thyme for garnish)

  • 1 tbsp butter (optional, for extra richness)


Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Prepare the carrots – If using larger carrots, cut them into even sticks to ensure even roasting.

  3. Mix the glaze – In a bowl, whisk together olive oil, honey, garlic, salt, pepper, and thyme.

  4. Coat the carrots – Toss the carrots in the glaze until well coated.

  5. Roast – Spread them out on a baking sheet in a single layer and bake for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.

  6. Optional step – Toss with a little butter before serving for extra flavor.

  7. Serve warm, garnished with fresh thyme or parsley if desired.
