Ingredients:
1 lb (about 4-5) carrots, peeled and cut into sticks or left whole if small
2 tbsp olive oil
2 tbsp honey
2 cloves garlic, minced
½ tsp salt
¼ tsp black pepper
½ tsp dried thyme (or fresh thyme for garnish)
1 tbsp butter (optional, for extra richness)
Instructions:
Preheat oven to 400°F (200°C).
Prepare the carrots – If using larger carrots, cut them into even sticks to ensure even roasting.
Mix the glaze – In a bowl, whisk together olive oil, honey, garlic, salt, pepper, and thyme.
Coat the carrots – Toss the carrots in the glaze until well coated.
Roast – Spread them out on a baking sheet in a single layer and bake for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
Optional step – Toss with a little butter before serving for extra flavor.
